Courtney moved to Colorado from Wisconsin where her family owns a potato farm. She is engaged to Colton, the general manager of our sister restaurant Swaylo’s Tiki. In her spare time, she likes to try new butters, sing karaoke, make charcuterie boards and hang out in the mountains. Courtney collects rocks from the trips she takes and displays them all over her house. She has an amazing lamb named Pepper that loves to cuddle and explore with Courtney and Colton. Her favorite cocktail is the Cherry Rye and you’ll find her with that and our delicious hummus quite often. She has worked in all styles of restaurants and is so excited to continue to grow in her knowledge and experience at The Roost under the Gafner’s! Oh and also, GO AVS GO!
